This recipe only has 6 ingredients and is gluten-free, is very easy to make and is ready in less than 15 minutes.

  • 1 1/2 cups unsalted peanut butter 270g
  • 2 eggs or 2 egg replacement*
  • 1 cup muscovado or coconut sugar 210g
  • 1/2 cup coconut flour 80g
  • 1/4 cup milk of your choice 55ml
  • 2 tsp vanilla extract
  • 1/2 tsp sea salt
  • 100 g dark chocolate optional
  1. Preheat the oven to 200°C and flour a baking sheet with parchment paper.

  2. In a large bowl put the peanut butter, eggs and sugar, mix everything with a fork, and add the rest of the ingredients and mix again.

  3. Make 20 balls of dough the size of a tablespoon, and with the help of a fork crush against the baking sheet. Bake for 10-12 minutes or until golden brown on top.

  4. Let cool

  5. For the chocolate bath melt the chocolate in the microwave or in a water bath and let it rest until it is at room temperature. Then once the cookies are cold, bathe each one in chocolate, and let cool.

Recipe Notes

*You can use an Orgran type egg replacement, or prepare one with 1 teaspoon of flax flour and 3 tablespoons of water for each egg, mix and let stand 15 minutes.
