Triple chocolate donuts

Donuts are one of the most delicious desserts on the planet, I do not think anyone disagrees, right? Fluffy dough, fried, with sugar or glaze, just saying it makes me drool. They are more than delicious, but they are not healthy, so I had to look for an alternative. These donuts are gluten and refined sugar free, with vegan option, full of chocolate, and them are baked which is much healthier than fried, and most importantly, they are very delicious!

Triple chocolate donuts

Fluffy, healthy donuts, full of chocolate and with a secret ingredient ... chickpeas!

Ingredients

Donuts

  • 1 cup cooked chickpeas unsalted
  • 1 cup almond milk
  • 1 cup sugar, muscovado or coconut sugar
  • 1/4 cup oil, preferably coconut oil melted
  • 2 eggs egg replacement*
  • 1 1/2 cup buckwheat flour
  • 2/3 cup raw cacao powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • pinch sea salt

Chocolate ganache

  • 1/3 cup coconut oil melted, room temperature
  • 1/4 cup raw cacao powder
  • 1/4 cup maple syrup

Instructions

Donuts

  1. Preheat the oven to 200°C

  2. Put the first 5 ingredients in a food processor and process until a homogeneous mixture is obtained. Add the rest of the ingredients and process again until you have a homogeneous, thick but not sticky mixture. If it is a very dry mixture, add a little more milk. Divide the mixture into 6-8 donut molds and bake for 15-20 minutes or until they are dry on the outside and well cooked on the inside. Let cool and put in the refrigerator.

Chocolate ganache

  1. Mix the ingredients and put in the refrigerator for ten minutes. Mix again and put the ganache on the donuts, add chocolate chunks or chocolate chips and keep them in the refrigerator until you eat them.

Recipe Notes

* You can use an Orgran type egg replacement, or prepare one with 1 teaspoon of flax flour and 3 tablespoons of water for each egg, mix and let stand 15 minutes.
