If you have doubts, add more chocolate, that’s the best way to dissipate them.
Chocolate cookies are my favorites, especially if they are healthy, soft, and tasty, with extra chocolate chips on top.
These cookies are an ideal snack to kill the craving of something sweet or to have ready from the previous day and eat them at breakfast, very easy to make, with only 6 ingredients.

One bowl, 3 minutes to make them and 12 to bake them are enough to make these delicious gluten-free cookies with vegan option.
Personally, I love having a batch of freshly baked cookies in the cupboard, and these became my new favorites, so I made them 3 times this week, and I will certainly do them again next week.

Soft double chocolate cookies
Cookies with only 6 ingredients, gluten-free, easy to make and with vegan option
Ingredients
- 1/2 cup unsalted peanut butter 90g
- 1/2 cup coconut or muscovado sugar 100g
- 1/2 cup melted coconut oil 90ml
- 1 egg + 1 egg yolk or 2 egg replacement*
- 1/3 cup raw cacao powder 30g
- 1 cup buckwheat flour 100g
- 1/4 cup water 50ml
- 1/3 cup dark chocolate chips Optional

Preheat the oven to 190°C

In a large bowl put the peanut butter with the eggs and the sugar and beat. Add the oil and mix again. Add the dry ingredients and integrate everything, if necessary, and the dough is very dry, add the water.

Form 10 balls of dough and crush them on a baking sheet with parchment paper and floured. Add the choco chips on top and bake for 10-12 minutes or until they are firm and begin to crack above.

* You can use an Orgran type egg replacement, or prepare one with 1 teaspoon of flax flour and 3 tablespoons of water for each egg, mix and let stand 15 minutes.
Hi Gaspar! Loving this new recipe but wondering, the measurements in grams are very different from the ones in cups. You say 1/2 cup peanut butter is 90 grams and 1 cup flour is 100 grams. Do you bake your recipes with grams? Should I just take the grams and forget about the cups? What do you recommend? Thank you so much
That happens because of the density of the ingredients, the grams is weight, the cups are in volume. You must follow one or the other, and forget about the one you do not use
