In this world there are two kind of people, those who eat bread with butter in a hurry, and those who wake up 2 hours before to make a big breakfast, I am the second type of person. And, my favorite breakfasts to make are waffles or pancakes, and this is my favorite waffle recipe.
Some fluffy waffles, and with the correct toppings is the best choice for a family weekend breakfast. These waffles are very healthy as well as super-rich, they are made of banana, buckwheat, and oats, they are free of

The recipe is super simple to make, you only need a blender and a waffle maker. First, you blend the wet ingredients, add the dry ones, let stand 5 minutes while the waffle maker is heating, and now you are ready to make the waffles. It depends on your waffle maker the time it will take you to cook each one, in mine it is approximately 5 minutes at medium temperature. So you should look at it every few minutes until you know how long it takes to cook.

Super fluffy healthy waffles
This recipe is perfect for weekend breakfast, super easy to make and very delicious.
Ingredients
- 2 ripe bananas
- 1/2 cup milk of your choice 120ml
- 1/4 cup sunflower or coconut oil 60ml
- 1 egg or 2 egg replacement
- 1 tsp vanilla extract
- 1 cup instant oats 100g
- 1/2 cup buckwheat flour 70g
- 2 Tbsp cornstarch
- 1 1/2 tsps baking powder
Instructions

In the blender put all the wet ingredients and blend until it is a homogeneous and smooth mixture. Add the dry ones and blend again until it is all integrated. If the blender finds it difficult to mix everything, stop the process, mix it with a spoon and blend it again.

Leave the mixture to rest for 5 minutes, while heating the waffle maker.

To make the waffles follow the instructions of the waffle maker. I heat it to 70% of the maximum temp, I put a little butter or oil to prevent the mixture from sticking, and I put 4 tablespoons of mixture per waffle. It takes me about 5 minutes each. Cook until they are fluffy and barely browned.

Top them with your favorite toppings like peanut butter, caramelized bananas and chocolate
Recipe Notes
*You can use an Orgran type egg replacement, or prepare one with 1 teaspoon of flax flour and 3 tablespoons of water for each egg, mix and let stand 15 minutes.
