Some of the best recipes of all arise from a craving, or an experiment, in this case, I had a craving to make my healthy banana bread, but I did not have the ingredients to make it, then I had to improvise, I mixed all my favorite ingredients, and taran, came up one of my best recipes so far!

Particularly I am a huge fan of bananas in the kitchen, they are very versatile, they serve to give a wet touch to the cakes or desserts, they give a rich fruity flavor, and they help to integrate the mixture, in fact sometimes the bananas are used to replace the eggs!
This is an easy cake to make, basically consists of 2 steps, process the nuts and the oats, separately, until turning them into flour, and then mix all the ingredients and bake.

This recipe can be vegan by replacing the eggs with a vegan replacement (see the notes to see which ones I use).
The only flour that is used is the oatmeal, so if you want a gluten-free version you should use gluten-free oatmeal, which you surely get at a store specializing in products for celiacs.

Moist banana walnut cake
This cake just takes a few minutes to make and some simple and easy to get ingredients! Perfect to share with your family or friends
Ingredients
- 5 ripe bananas
- 2 eggs or 3 egg replacement*
- 2/3 cup coconut or muscovado sugar 130g
- 1/2 cup natural unsalted peanut butter 100g
- 2 tsp vanilla extract
- 2 cups processed walnuts 300g
- 2 cup oat flour 200g
- 2 tsp baking powder
- 1/4 tsp sea salt
- 1/2 cup dark chocolate chips 90g
Instructions

Preheat the oven to 190 ° C, butter and flour a mold of 20x20cm approx. with parchment paper.

In a large bowl, mash the bananas with a fork and mix it with the eggs, peanut butter, vanilla, and sugar.

Process the walnuts until you get a thick flour, without large pieces, do the same with the oats, if you already have oat flour skip that step.

Put the processed nuts and the oats in the bowl with the wet ingredients, and mix well until everything is well integrated, add the rest of the ingredients and mix again.

Put the mixture in the mold and take it to the oven for 18 to 25 minutes or until when inserting a stick in the cake it comes out barely humid, it should not come out completely dry since the idea is a wet cake.

*You can use an Orgran type egg replacement, or prepare one with 1 teaspoon of flax flour and 3 tablespoons of water for each egg, mix and let stand 15 minutes.
