Scones, these little biscuits bring me many memories, with a unique texture, native of England, they are an English classic that won the hearts of everyone, but why are they so famous?
I believe that for various reasons, they are relatively simple to make, you do not need great skills to make them, they are fast and simple to make, and versatile, they can be either sweet or savory, or neutral, ideal to put jam on top, fruit, cheese, or the ingredient that you like for the snack time.

These scones, unlike the classic ones, do not have butter, nor refined white flour, but they have a texture very similar to the classic ones. They have lemon flavor and are full of blueberries. This combination is very summery, and the juicy berries in each bite are really pleasant, you understand what I say? Bite the scone, and feel the juice of the blueberries is really dreamed!
These scones have oat flour and also whole instant oats, as well as whole wheat flour, which keeps the scones full of fiber and with a great texture. They also have eggs, lemon zest, a lot of this, because there is never enough lemon flavor haha, and oil, which gives the texture that scones usually have thanks to the butter. They are also sweetened with muscovado sugar, and have a lot of blueberries, which undoubtedly make the difference.

Lemon blueberry scones
Easy and quick to make, very healthy and perfect for the tea
Ingredients
- 2 cups oatmeal flour 200g
- 1/2 cup instant oats 50g
- 1 1/2 cups whole wheat flour 200g
- 2/3 cups muscovado or coconut sugar 140g
- 2 large eggs
- 1/2 cup neutral liquid oil (coconut or sunflower oil) 100ml
- 1/2 cup milk of your choice 100ml
- 2 tsp baking powder
- 1 Tbsp lemon zest
- 1 cup blueberries
Instructions

Preheat the oven to 180°C. And line a round mold of cake with parchment paper and flour (mold about 20cm in diameter)

In a bowl mix the flours, oats and baking powder, In another bowl beat the sugar with all the wet ingredients, and pour the mixture into the bowl with the flours, mix and add the zest and blueberries. It must be a homogeneous mixture, sticky but not too much.

Put the mixture in the mold, cut it in 6 portions with the help of a knife, and bake it for 20-25 minutes or until they are firm and browned on top.

Let cool or eat lukewarm, accompany them as you like.
