Buckwheat galette

Every day I love more make galettes, it’s fun to fold the dough on the fruit, and it’s like a tart but simpler and faster, super delicious, crunchy, and perfect to share, plus you can make many different flavors. Did you ever have galette for breakfast? It’s super delicious, my favorite fillings are apple or blueberries. It´s an amazind breakfast option, it isn´t?

I really recommend making the dough one or two hours before, so in this way the dough gets enough consistency, then just stretch the dough, stuff it and bake it. Besides that it´s very good idea to add jam or fruit compote underneath the whole fruit, in this way we obtain a tart much more tasty and wet.

Buckwheat galette

A perfect breakfast to share with your partner or with a friend, especially on a weekend. Doing them in summer, at tea time with a great scoop of ice cream is really great, everyone will want you to make them galettes every day.

Ingredients

Crust Ingredientes:

  • 2 cups buckwheat flour
  • 1/2 cup cornsatrch
  • 2/3 cup oil (melted coconut oil or another oil of your choice)
  • 1/3 cup coconut or muscovado sugar
  • pinch of sea salt
  • 2 flax eggs *

Filling: Apples, plumbs, peaches, berries, pears, you can choose the fruit of your preference and jam or compote that combines well with the fruit.

Instructions

  1. Preheat the oven to 190°C
  2. Process all the crust ingredients until homogeneous, you have to get a very moist and smooth mixture, which will not break the dough, ideally to cool for at least an hour to improve consistency. Put parchment paper on a baking sheet and stretch the dough to a circle of 3 millimeters thick. Fill with fruit and compote or jam, the best combinations are apple with applesauce, pears, blueberries and berry mermelade, or peaches with orange marmalade, but you can choose your favourites fillings, be creative! Then fold the dough over the fruit, you can sprinkle with more sugar, and bake for 25-30 minutes at 190 ° C or until the dough is crunchy and golden. Eat hot with coconut cream and maple syrup, so delicious.

*Flax eggs or chia eggs 5 tsp flax or chia meal with 10 Tbsp of water, let stand 15 minutes
