Pumpkin brownie

Super easy, with only 8 ingredients, and very quick to make, this brownie will become one of your favorites

  • 2 cups pumpkin puree 420g
  • 2 eggs or 2 egg replacement*
  • 1 cup unsalted natural peanut butter 210g
  • 1 cup coconut or muscovado sugar 240g
  • 1 cup cacao powder 90g
  • 1 cup buckwheat flour 120g
  • 1 tsp vanilla extract
  • 1 tablet of dark chocolate 150g
  1. Preheat the oven to 180°C

  2. In a large bowl mix the puree, sugar, eggs and vanilla.

  3. Melt the peanut butter and chocolate and pour over the mixture with puree. Stir well until everything is integrated.

  4. Add the dry ingredients and mix, taking care that no lumps remain. Put in a mold with parchment paper and bake for 12-15 minutes or until it is dry on the outside but still moist on the inside.

  5. Let cool and accompany with ice cream of your choice

Recipe Notes

*You can use an Orgran type egg replacement, or prepare one with 1 teaspoon of flax flour and 3 tablespoons of water for each egg, mix and let stand 15 minutes.
