A few days ago I made a lime and coconut pie (key lime pie) which is a classic American dessert, well known that is similar to lemon pie, but it has limes instead of lemons, and cream with coconut instead of Italian meringue. And some of my vegan friends asked me if I could make a vegan version, and if there is something I like it is to try new things, so I set to work.

And not only is it a vegan pie, but it also does not need oven, and it does not have sugar, it is sweetened with maple syrup (although you can also use honey). It has a raw crust made with walnuts, oats and cacao, because chocolate and citrus are a great combination.
The filling is made of avocado, yes, it sounds weird, right? But avocado in desserts is GREAT! It gives an amazing creaminess, plus it is much healthier than any other filling that you can make, and already gives the green color to the filling. This pie also has large amounts of lime zest, cashew butter, coconut oil and maple syrup, it is super easy to make and everything is combined in this delicious filling worthy of being eaten directly from the food processor by spoonfuls.

And finally, the meringue, is a meringue that is not made with egg whites, instead of them is made with aquafaba, which is the liquid obtained by cooking chickpeas, which has large amounts of protein and therefore manages to mount and become a meringue. And it is sweetened with hot maple syrup, which acts as the syrup does in the Italian meringue, thus achieving a smooth meringue that is maintained over time.

Vegan key lime pie
Pie without oven of lime and vegan meringue, with a base of nuts and cacao, filled with avocado lime cream and vegan meringue from aquafaba, completely sweetened with maple syrup, easy to make, and very rich.
Ingredients
Crust
- 2 cups walnuts 200g
- 1 cup instant oats 100g
- 1/4 cup raw cocoa powder 22g
- 1/4 cup maple syrup or honey 75g
- 1/4 cup melted coconut oil 55ml
- 2 Tbsp cashew butter (or sub for any other nut butter)
Filling
- 3 medium ripe avocados
- lime and juice of two limes
- 1/2 cup maple syrup or honey 150g
- 1/4 cup melted coconut oil 55ml
- 2 Tbsp cashew butter (or sub for any other nut butter)
Meringue
- 1/3 cup aquafaba (from canned chickpeas is better) 70ml
- 1/4 cup maple syrup or honey 75g
Instructions
Crust

Process the nuts until you get a fine flour, add the rest of the ingredients and process until they are integrated. Put in a tart mold of 20cm in diameter and cool while you make the filling.
Filling

Process all the ingredients of the filling until you get a cream, put on the crust and cool.
Meringue
-
Beat the aquafaba until you get firm peaks. Heat the maple syrup without letting it boil, and pour it over the aquafaba while you keep beating until it cools completely. Put on the pie and let cool.
