Pecan nuts give an incredible crunchy touch, and is sweetened with maple, which in addition to sweetness gives a flavor that goes perfectly with the sweet potato. Go ahead to try this recipe, and if you want to vary a little you can add cinnamon, chocolate or even…bourbon!

Sweet Potato muffins

The sweet potato gives an amazing color to these muffins, it also gives sweetness and great flavor, with maple and pecan nuts is amazing.

Ingredients

Wet ingredients:

  • 1 cup mashed sweet potato
  • 2 flax eggs *
  • 2 Tbsp melted coconut oil
  • 1/2 cup maple syrup
  • 1/2 cup water or plant-based milk

Dry Ingredients:

  • 1 cup buckwheat flour
  • 1/2 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • pinch of sea salt
  • 2/3 cup chopped pecan nuts

Instructions

  1. Preheat the oven to 200 ° C. Beat all the wet ingredients well, make sure they are well integrated. In a separate bowl mix the dry ingredients well and add them to the bowl with the wet ones, also add the nuts. Mix well again. Put the mixture in 12 molds for muffins, you can use non-stick molds or put a little oil, flour or parchment paper, and thus prevent muffins from sticking to the mold. Add some extra nuts on the top, bake for 20 minutes or until golden brown and separate from the edge of the mold. Cool and enjoy!

Recipe Notes

*Two teaspoons of flax meal and two tablespoons of water, mix and let stand for 15 minutes.

    Hey, I’m wondering if I could swap buckwheat flour for oat flour? I’m not the biggest fan of buckwheat…

    Oat flour will make the muffins more dense, but it will also work well, let me know if you try any recipe!

    I just tried your recipe and it turned out great. I just reduced the maple syrup a little and added vanilla and cinnamon. Thanks for sharing the recipe. I will keep it and make it again.
