Okay, this recipe represents me. If I go to an ice-cream parlor (which is not very common, I prefer to make my own healthy ice cream from frozen bananas, or, since a time, ice creams like this one) I will order super dulce de leche ice cream. Super DDL ice cream is usually dulce de leche ice cream mixed with natural dulce de leche and sometimes chocolate chips, which in this case I replaced with my favorite snack (which I almost never eat haha) KitKat.

As I was telling you, for a few weeks I’m obsessed with making my own ice cream. I’ve been wanting to buy an ice cream machine for quite some time (and I definitely will, but there are other priorities on the list) so I decided to figure out how to make my own homemade ice cream without a machine. It turns out that making homemade ice cream, classic, without a machine, old school way, is very simple, you only need a pot, a freezer, and a processor or a powerful blender. And the ingredients are very simple too, eggs, yogurt or heavy cream, sugar, and the extra ingredients to give it the flavor and style you want!

The procedure is equally simple. And you only have to keep one thing in mind. Do not cook the eggs when you are adding them to the cream mixture (which will be hot). If you take care of that, and dedicate 25-30 minutes to ensure that it does not burn or stick, you will get the best ice cream in the world + the enormous satisfaction of eating something delicious made by you and knowing that it does not have junk as thickeners, colorants, flavorings, etc.
So I invite you to check the recipe, and try it, either with dulce de leche and KitKat, or with coconut and peach (which is delicious, I will share the recipe soon) or any other combination of flavors that you like.

As always, thank you very much for reading the post, if you try the recipe do not forget to write me on Instagram to @ gaspar.carreira or send me an email to gasparcareira@gmail.com telling me how it came out and sending me a photo, it makes me happy to see your remakes and listen to your reviews!

No churn dulce de leche icecream
This is a simple and easy to make ice cream, no need for an ice cream machine or complicated proccedures
Ingredients
- 2 cups heavy cream 480ml
- 1 cup unsweetened natural yogurt 240ml
- 1 cup milk 240ml
- 1 cup dulce de leche 350g
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- 7 egg yolks
- 1/2 cup sugar
- Kit Kat optional
- More dulce de leche to combine optional
Instructions
-
Mix the first 6 ingredients and bring to low heat until hot without coming to boil. Meanwhile, in a large bowl, beat the yolks with the sugar until it is very creamy. Turn off the heat and pour 2 or 3 tablespoons of the hot dulce de leche mixture into the beaten yolks, continue beating at high speed, repeat the procedure until everything is integrated.
-
Return the mixture to a pot and cook over low heat, stirring every few minutes, taking care not to stick, until it begins to thicken (about 12 to 15 minutes). Remove from the heat and let it cool.
-
Transfer the mixture to a bowl and freeze for 4 hours or until firm. To make it very creamy, remove from the bowl with a spoon, transfer to a food processor, and pulse until creamy. Return to the bowl and mix with the dulce de leche and the chocolate or kit kat and freeze until ready to eat. (If you want a creamier texture you can re-frezze and re-process a second time before adding the natural dulce de leche and chocolate).
