Kumquat almond crumble

I haven´t eaten crumble for a long time, I´m a huge fan of my mother’s apple crumble. So I decided to make my own version, more healthy and delicious. If you like the citrus flavor I´m sure you´ll love this dessert.

In each bite feel the different layers of textures is very amazing and comforting, it is difficult to resist and only eat a slice, so I recommend sharing with friends or family and thus avoid eating the whole crumble in a sitting

For the filling I used homemade orange and kumquat jam, I’m not fanatic of the citrus jam but this homemade change my opinion, you can really differentiate the flavors, and the differents textures, the crust, filling and the crumble, is great.

Citric almond crumble

Perfect for those who love citrus desserts, the almond in combination with orange and kumquat is heavenly, it´s also a vegan recipe and super easy

Cook Time 30 minutes
Total Time 40 minutes
Servings 9 slices (20x20 cm)

Ingredients

Crust:

  • 1 cup rolled oats
  • 3/4 cup spelt flour
  • 3/4 cup almond flour
  • 1/2 cup coconut oil melted (or oil of your choice)
  • 1/4 cup muscovado or coconut sugar
  • pinch of sea salt
  • 1 tsp baking powder

Crumble & Filling:

  • 1/2 cup chopped almonds
  • 3 Tbsp maple syrup
  • 1 1/4 cup citric marmalade*

*I use homemade kumquat and orange marmalade

Instructions

  1. Preheat the oven to 190°C
  2. Process all the ingredients, except the crumble and filling ingredients, until it´s a homogeneous mixture. Put three-quarters of the mixture in a mold (20x20cm with parchment paper) and press well. Top with the jam, mix the rest of the base mixture with the chopped almonds and maple syrup, put up the jam in form of a crumble and bake for 30-40 minutes or until the crumble begins to brown. Cool and enjoy!
