Oatmeal & almond cookie sandwiches

Cookies and ice cream, to everyone this reminds of us childhood. And if it’s raspberry ice cream between two super crispy oatmeal cookies it reminds you of the best day of your childhood haha. But who said that only the little childrens can eat this?

They are a refreshing and delicious dessert for the whole family. To do it in a few minutes and enjoy them on a hot day … or in winter too, icecrem season never ends

Oatmeal & almond cookie sandwiches with raspberry acai nicecream

Great cookies with lots of ice cream in between, easy to make and very delicious, who said summer?

Ingredients

Cookies recipe

  • 3 cups rolled oats
  • 1/2 cup coconut or muscovado sugar
  • 1/2 cup oil (I used melted coconut one)
  • 3 egg replacement (I used Orgran egg replacement)
  • 1 Tbsp ground cinnamon
  • pinch of sea salt
  • Crushed almonds

Nicecream recipe

  • 3 Frozen bananas
  • 1 cup frozen raspberries
  • 2/3 cup almond milk from Ecomil
  • 2 Tbsp acai powder

Instructions

  1. For the cookies, preheat the oven to 200°C. Grease and flour a roasting pan. Process half of the oats (1 1/2 cups) until you get a fine flour. Put all the dry ingredients and mix them well. Add oil and eggs, beat well. Make 10 cookies of approximately 10 cm in diameter by half a centimeter high. Put some almonds on top and bake for 15-20 minutes or until golden and crispy on the outside.
  2. For the ice cream, put the fruit in a food processor until you have a homogeneous and smooth mixture, add the milk and acai powder. Process again and return to the freezer for one hour while the cookies cool. Put one scoop of ice cream on top of the cookie, top with other cookie and press gently, if the ice cream is too hard, leave it a few minutes outside of the freezer before making the sandwiches. Keep in the freezer and take 10 minutes before eating them.
