I’m not a fan of Oreos, in fact, I hate them, so I don’t know if I could call “Oreos” to these cookies, since these are definitely a million times better than oreos, which are full of … shit!
Simple, crunchy cookies with only 8 ingredients, plus a creamy vanilla filling is equal to winning combo in any language, when I bit the first of these cookies I knew I was going to eat the whole batch at once, just delicious.

Healthy oreos
Crunchy cookies filled with vanilla-cashew cream.
Ingredients
Cookies
- 1 1/2 cups buckwheat flour 180g
- 1/2 cup raw cacao powder 45g
- 1/2 cup muscovado or coconut sugar 100g
- pinch sea salt
- 1 egg or 2 egg replacements*
- 1/4 cup liquid oil 22ml
- 1 tsp vanilla extract
- 3 Tbsp cold water
Filling
- 1/2 cup cashew butter 110g
- 1/4 cup maple syrup or honey 75g
- 3 Tbsp melted coconut oil
- 2 tsp vanilla extract
- pinch sea salt
Instructions

Preheat the oven to 180°C.

Mix the flour with cacao, sugar, and salt. Add the rest of the ingredients except the water and mix until everything is well integrated. Add the tablespoons of water of one by one until get a moldable dough, no sticky, if necessary continue adding water.

Stretch the dough and cut 24 discs of 5cm in diameter.

Bake for 12-15 minutes or until crisp.

Let cool.
Cream filling

Mix all the ingredients well and let cool 5 minutes before filling the cookies.

Recipe Notes
*You can use an Orgran type egg replacement, or prepare one with 1 teaspoon of flax flour and 3 tablespoons of water for each egg, mix and let stand 15 minutes.
