Breakfast brownie cups

Who does not love to start the day with chocolate? These brownie cups are super healthy but at the same time they are decadent and super rich! They are made with wholemeal ingredients and super simple to get, and I have filled them with fruit and yogurt, which gives a light and refreshing touch, which combines perfectly with chocolate.

Breakfast is always one of my incentives to get out of bed, and I love knowing that I have breakfast ready the night before, so what I recommend is to make these cups the night before (they are baked in 12 minutes) and fill them in the morning, in this way there is no excuse for not having breakfast in the right way!

Breakfast brownie cups

Simple, with only 6 ingredients, super healthy and perfect for breakfast.

Ingredients

  • 2 1/2 cups instant oats 250g
  • 1/2 cup unsalted peanut butter 100g
  • 2/3 cup coconut or muscovado sugar 130g
  • 1 egg or 2 egg replacement*
  • 1/3 cup coconut water 70ml
  • 1/2 cup raw cacao powder 45g

Instructions

  1. Preheat the oven to 200°C

  2. Process oats until you get a fine flour. Add the rest of the ingredients and process until everything is well integrated.

  3. Put the mixture in 10 muffin molds with parchment paper, so that the dough is as if it were the crust of a tart/pie.

  4. Bake until they are dry and begin to separate from the edges.

  5. Let cool and fill with coconut or greek yogurt and your favorite fruits

Recipe Notes

* You can use an Orgran type egg replacement, or prepare one with 1 teaspoon of flax flour and 3 tablespoons of water for each egg, mix and let stand 15 minutes.
