Banana Bread

Who didn´t try in his life a banana bread? Well, I have tried many, I´m a fan of these, and this is the most delicious I tried in my life. Completely gluten free, refined sugar free and with very very little oil, which can even be suppressed.

Topped with pecan nuts and goji berries, but you can put your favorite toppings, I love to put cashew nuts and cashew butter as if it were a drizzle.

This bread is perfect for making some super delicious toasts, I really love the smell of toasted banana bread, nothing better than this in the morning.

Banana Bread

I have known food fanatics who have not tried a banana bread in their life, well, if they try this they will become banana bread lovers

Ingredients

Wet ingredients:

  • 1 cup mashed ripe bananas
  • 1/2 cup muscovado or coconut sugar
  • 2 Tbsp oil (I use coconut oil, melted)
  • 1/2 cup almond milk
  • 1/2 tsp vanilla extract
  • 1/2 cup Aquafina

Dry ingredients:

  • 1 cup buckwheat flour
  • 1 cup gluten-free flour mix
  • 1 1/2 tsp baking powder
  • pinch of sea salt

Toppings:

  • Chopped nuts (I love pecan nuts, and a banana cut in half with coconut sugar.)

Instructions

  1. Preheat the oven to 180°C
  2. Mix well all the wet ingredients except the Aquafina, add dry ingredients and mix until everything is well integrated. In another bowl put the Aquafina with a pinch of sea salt, if it´s canned the salt isn´t necessary, and beat until all the liquid is converted into bubbles, about 2 minutes. Add the Aquafina to the other mixture, mix gently with the least number of possible movements. Put the mixture in a mold with parchment paper, a bread loaf about 20 centimeters long by 7 wide, top with your favorite toppings, and bake for 30-40 minutes or until golden brown above and the bread is no longer soft on the outside.
