Baked donuts are a true delight, they are like little donut-shaped cakes, very fluffy and much healthier than fried donuts. Have you ever tried them? And the chocolate ones?

Well, I assure you that you never tried some donuts like these, because although they do not seem it, more than half of these donuts is vegetable, more specifically sweet potato, yes, they are 50% sweet potato, but you would never guess it since it does not feel !

These donuts are fluffy, moist, light, and do not have refined flour, and by this, I mean that the only flour that it has is coconut flour, wich is amazingly versatile and nourishing, and the amount is very little in relation to the other ingredients.

But how to make coconut flour and sweet potato become a delicious donut, healthy but yet decadent? The answer is with a lot of dark cacao powder, which is healthy if it does not contain refined sugars, it has a large amount of antioxidants and healthy fats. And finally a chocolate glaze, with coconut oil, chocolate, cacao and honey that gives the ideal touch to these delicious donuts.

If you do not have a mold for donuts, you can make them in molds for muffins, and if you want them to have the shape of a donut you can make a small ball of aluminum foil and put it in the middle of the muffin mold, and you will have some pretty donuts with the proper hole in the center.

These donuts are gluten-free, refined sugar free and without refined flours, very simple to make, and an ideal option for those who miss eating a donut and have a healthy diet…THESE DONUTS ARE THE BOMB!

Baked chocolate donuts

Fluffy and healthy baked chocolate donuts, based on sweet potato and coconut flour they are gluten-free and paleo too.

Cook Time 30 minutes
Total Time 40 minutes

Ingredients

  • 2 large sweet potatoes 450-500g
  • 2 large eggs
  • 1/4 cup liquid oil, coconut or sunflower 50ml
  • 3/4 cup coconut flour 130g
  • 3/4 cup cacao powder 90g
  • 3/4 cup coconut or muscovado sugar 140g
  • 1/4 cup espresso 50ml
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp sea salt

Glaze

  • 50 g dark chocolate at least 80%cacao
  • 1/4 cup melted coconut oil 50ml
  • 1/4 cup raw cacao powder 30g
  • 1/4 cup honey or maple syrup 70g

Instructions

  1. Preheat the oven to 180°C

  2. Wash, peel and chop into cubes the sweet potatoes. Then put them in a processor and process until they are well chopped, without big pieces, like minced sweet potato.

  3. Add the rest of the ingredients and process until everything is integrated. Divide the mixture into 12 donut molds (non-stick or with a little oil) and bake for 25-30 minutes or until firm and fully cooked. They should not be dry

  4. Unmold and let cool

Chocolate glaze

  1. Melt the chocolate, the coconut oil and heat the honey. In a bowl mix these 3 ingredients and add the cocoa. Mix again and put on each of the donuts. Keep in the refrigerator

    I love your recipes! But can i make it without any sugar? Or is the sugar necessary?

      You can replace the sugar with more maple syrup or honey if you want.

      Yes, you can replace the eggs with any egg substitute, go to the notes of the recipe to see which egg substitute is the one I use

    This are, as you said, the bomb!! I made them
    for a brunch I hosted using mini bundt cups in lieu of donut molds. They were sooooo amazing! The only problem I had was with the glaze. When I made it according to the recipe it came out gritty and lumpy. I removed it from the cakes and made it agin omitting the cacao powder and using 100% cacao chocolate (unsweetened). That did the trick! My guests LIVES them!
