Baked apple cinnamon sugar donuts

BAKED DONUTS! Yes, and they have nothing to envy to fried donuts. So there is no excuse for not eating donuts now.

They are made of apple, muscovado sugar, and cinnamon, that is, a real delight. They are super fluffy, and the coating of cinnamon sugar gives it a very good crunchy touch worth of the classic donuts.

NOTHING TO ENVY TO THE FRIED ONES!

These donuts are very easy to make, you just need a blender, and simple ingredients that you surely already have or can find in the supermarket around the corner, and healthy ingredients, like oats, apple, muscovado sugar and cinnamon powder. And they are as simple to make as putting everything in the blender, to the molds, and to the oven!

The cinnamon sugar is the best part

To make the coating, you have to paint the donuts with melted butter or coconut oil. And then coat the still-warm donuts in the cinnamon sugar, it makes my mouth water from just thinking it!!! Bye, I’m going to make them again

They are really fluffy!

Oats gives them a very good texture, and the apple keeps them moist, cinnamon gives it a lot of flavor, it is the perfect combo!

They are soft, and ideal for the tea, you can´t no to try them! There is also a vegan version for you in the notes of the recipe, which I tested and was just as delicious as the non-vegan version. And if you are gluten intolerant, or have a gluten-free diet, you can replace oats with gluten-free oats suitable for celiacs.

Baked apple cinnamon donuts

Super easy-to-make-donuts, baked, with cinnamon, apple and oats, very fluffy and soft!

Cook Time 20 minutes

Ingredients

  • 2 apples
  • 1/4 cup meted coconut oil or sunflower oil 60ml
  • 2/3 cup muscovado sugar 100g
  • 2 eggs or 2 flax eggs for the vegan option*
  • 1 tsp cinnamon powder
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 2 cups instant oats (gluten free if needed) 200g
  • 3 Tbsp cornstarch
  • 2 tsp baking powder

Cinnamon sugar

  • 1/2 cup muscovado sugar 75g
  • 1 Tbsp cinnamon powder
  • 2 Tbsp melted coconut oil or butter

Instructions

  1. Wash and chop the apples and blend them together with the wet ingredients.

  2. Once homogeneous, add the dry ingredients, and blend until you get a smooth mixture.

  3. Let stand 10 minutes while preheating the oven and grease 12 donut molds (or use silicone molds). Fill the molds up to 3/4 of its capacity, and bake them for 10-12 minutes or until fluffy and golden brown. Let cool

  4. For the sugar coat, melt 2 Tbsp of coconut oil, butter or ghee, paint the donuts with the oil, and coat them with muscovado sugar mixed with cinnamon powder. Enjoy!

Recipe Notes

*Mix 2 Tbsp of flax meal with 6 Tbsp of water and let rest 15min
