This brownie is super easy to make, very rich and soft.

  • 2 cups mashed sweet potato 450g
  • 2 cups instant oats 200g
  • 200 g dark chocolate 120g melted and 80g chopped
  • 1/2 cup cacao powder 45g
  • 1/2 cup muscovado or coconut sugar 100g
  • 1 Tbsp vanilla extract
  • 1/4 tsp sea salt
  1. Preheat the oven to 200°C

  2. Melt 120g of the dark chocolate in a water bath or in the microwave. While process all the ingredients except the remaining chocolate, once this is all integrated add the melted chocolate and process again.

  3. Put the mixture in a 20×30cm mold with parchment paper, top with the remaining chocolate, chopped, and take to the oven 15-20 minutes or until it is firm, inside it must be moist. Let cool and enjoy
