Vanilla poppy seed baked oatmeal

Oatmeal is delicious, but baked oatmeal is 100 times better, super fast and simple to make

  • 2 1/2 cups rolled oats
  • 1 cup almond milk or any other plant-based milk
  • 1/2 cup muscovado or coconut sugar
  • 2 tsp vanilla extract
  • 4 Tbsp poppy seeds
  • 1 tsp baking powder
  • 2 egg replacement (I used Orgran egg replacement)
  1. Preheat the oven to 190 ° C. Mix the dry ingredients and add the wet ones little by little. Beat well and put in a mold with parchment paper. Sprinkle some oatmeal flakes on top and bake for 20 minutes or until golden brown on top and not too moist on the inside.
  2. Finish with your favorite toppings, berries, ice cream and chocolate are my favorites, goes perfectly together.
