Triple chocolate cake

Chocolate, over chocolate, and chocolate on top. Nothing more to say, simply the best cake on the planet.


You need several ingredients, but they are all simple to get, it’s perfect for a party, for a birthday, I just want to tell you that if you try this cake, you’ll never forget it. The dough is really moist, and both the ganache and the filling are dark chocolate, so you really can taste the intense taste of chocolate.

Despite being full of chocolate is a healthy, vegan, gluten and refined sugar free cake, so, what is the reason for not trying to do it?

Triple chocolate birthday cake

A cake more than delicious, for those who love chocolate this really will be their favorite cake.

Ingredients

Cake:

  • 2 1/2 cups gluten-free flour mix
  • 2 cups buckwheat flour
  • 1 Tbsp baking powder
  • 1 tsp baking soda
  • 2/3 cup raw cacao powder
  • 2/3 cup muscovado or coconut sugar
  • 1 cup hot fresh coffee
  • 2 cups hot water
  • 4 1/2 Tbsp melted coconut oil
  • pinch of vanilla extract
  • pinch of sea salt
  • 12 Tbsp aquafaba (divided into three parts)

Filling:

  • 1/2 cup melted coconut oil
  • 1/2 cup mape syrup
  • 3/4 cup melted dark chocolate (about 200g)
  • 1/3 cup raw cacao powder
  • 1/4 cup coconut milk

Chocolate ganache:

  • 1/3 cup melted dark chocolate (about 85g)
  • 1/3 cup full fat coconut milk
  • 1 Tbsp maple syrup

Instructions

Cake:

  1. Put all the dry ingredients in a large bowl and mix well. Add coffee and oil and mix well again. Add the rest of the liquids, except the aquafaba, little by little and stir until well blended. In another bowl beat the aquafaba until all the liquid is transformed into bubbles. Put the aquafaba in the bowl with the other ingredients and mix well, with the least amount of movements possible. Divide the mixture into three 20 cm diameter molds with parchment paper and bake for 15-20 minutes or until dry outside and just moist inside. Demold and cool

Filling:

  1. Melt the chocolate in the microwave, be careful not to burn. In another bowl mix the rest of the filling ingredients and beat well without being lumps. Add melted chocolate and stir until smooth. Cool for about five minutes or until the mixture obtains consistency of cream. Assemble the cake, dividing the chocolate cream into two parts and placing it between layers of cake.

Ganache:

  1. Melt the chocolate and mix it with milk and syrup, pour over the cake, add chocolate chips and cool before cutting.
