This brownie only has 8 ingredients and is very simple to make. Do you know the recipe popularly called 1 2 3 4cake or something like that? It is a recipe that has 1 cup of cream, 2 of sugar, 3 of flour and 4 eggs, it is clearly not a healthy recipe, nor does it sound very tempting to me, but it must be admitted that it is an easy recipe to learn. Well, this brownie recipe is very easy to remember, it’s like a 2,2,1,1,1,1,1,1 lol very simple, right?
This brownie is healthy, has pumpkin puree that gives it a great wet touch, it is dense as it should be the brownie, and very full of chocolate! With a whole cup of cacao and a big tablet of dark chocolate inside you can say that it’s like eating soft and wet chocolate… although that sounds a little weird.
And if you want, like I did, you can take the recipe to the next level by adding ice cream, it can be simply a scoop of ice cream on the top or make a sandwich, it is simply heavenly!!!

Pumpkin brownie
Super easy, with only 8 ingredients, and very quick to make, this brownie will become one of your favorites
Ingredients
- 2 cups pumpkin puree 420g
- 2 eggs or 2 egg replacement*
- 1 cup unsalted natural peanut butter 210g
- 1 cup coconut or muscovado sugar 240g
- 1 cup cacao powder 90g
- 1 cup buckwheat flour 120g
- 1 tsp vanilla extract
- 1 tablet of dark chocolate 150g
Instructions

Preheat the oven to 180°C

In a large bowl mix the puree, sugar, eggs and vanilla.

Melt the peanut butter and chocolate and pour over the mixture with puree. Stir well until everything is integrated.

Add the dry ingredients and mix, taking care that no lumps remain. Put in a mold with parchment paper and bake for 12-15 minutes or until it is dry on the outside but still moist on the inside.

Let cool and accompany with ice cream of your choice
Recipe Notes
*You can use an Orgran type egg replacement, or prepare one with 1 teaspoon of flax flour and 3 tablespoons of water for each egg, mix and let stand 15 minutes.
