Just as I love to eat and cook, I’m also a big fan of the gym, of the weights, and obviously of the healthy food as of the protein, so every time that someone propose me to make a recipe high in protein I say yes, because that combines all my passions in one, plus I already resolve the issue of what to eat after train.

One of the recipes that I always wanted to make but it never came out very well are cookie bars, which are bars that have a texture and flavor similar to the classic vanilla cookies and chocolate chips, which generally, are not healthy, of course, but with this recipe, I achieve the same result and without refined products, and with a lot of protein for each serving!

These cookie bars are made with easy-to-get or homemade ingredients, without refined flours (I use oatmeal and coconut flour) and to replace the large amounts of butter that give the texture and consistency to the cookies I used cashew butter, although you can also use any other nut butter.
And of course the ingredient that differentiates these from the other recipes of cookies bars is the protein powder and the eggs. This time I used whey protein and 3 whole eggs, both to bind the mixture and to provide more protein to the recipe. But if you do not have, or do not want to add protein powder, you can rewind it for the same amount of oat flour.

Protein cookie bars
Bars with the texture and flavor of vanilla cookies with chocolate chips, without refined products, high in protein and ready in 15 minutes
Ingredients
- 1/2 cup cashew butter 120g
- 3 large eggs
- 1/2 cup coconut or muscovado sugar 100g
- 3/4 cup milk of your choice 180ml
- 1 tsp vanilla extract
- 1/2 cdta sal marina
- 2 cups of oat flour 200g
- 1/2 cup coconut flour 80g
- 2 scoops vanilla protein powder 60g
- 1/2 cup dark chocolate chips 100g
Instructions

Preheat the oven to 180°C

In a large bowl beat the first 6 ingredients, once integrated add the dry ingredients and mix well.

Put the mixture in a lined rectangular mold of 20x30cm. Add the chocolate chips on top and cook for 10-12 minutes or until golden brown on top.

Let cool, cut into 12 portions and enjoy
