Protein almond truffles

Personally, I love having some truffles always at hand, they are truly the best postworkout snack or when you crave something sweet and quick! These packed with lots of protein are ideal for after training, since they are full of protein of high biological value and good fats, coming from almonds and coconut oil. Besides, each one is an energy and flavor pump!

Protein almond truffles

Super simple, ready in just 5 minutes, creamy and very rich.

Prep Time 5 minutes
Servings 16 balls

Ingredients

  • 3 cups raw almonds
  • 1/2 cup coconut oil melted
  • 1 cup pitted dates
  • 1/3 cup maple syrup or honey
  • 1/3 cup water
  • 4 scoops protein powder unflavored or vanilla flavor
  • sesame seeds to roll the truffles

Instructions

  1. Process the almonds until you don't have large pieces of these. It should be almost like almond flour. Add the oil and process until it is well integrated. Add the rest of the ingredients except the sesame seeds and process until you have a homogeneous mixture. You should be able to make a ball without it breaks or sticks to your hands. If it is very sticky let it cool before working it. If it is dry, add more water.

  2. Make 12 to 16 balls of the same size and roll over sesame seeds. Keep in the refrigerator for up to 3 days.
