If you follow me for a few months you will have realized that I am a peanut butter addict, I use it as a replacement for oil, butter, to give flavor, texture, and sometimes it becomes the main ingredient of the recipe, as in this case.
Did you ever make waffles? Do you have a waffle maker? If the answer is yes to both you already know what I mean when I say that the waffles are a heavenly invention. And if any of the answers is no, I tell you that you need to add a waffle maker to your shopping list for Christmas. A well-made waffle takes breakfast to the next level.
This recipe only has 6 ingredients, it is super simple to make, gluten-free and very tasty. It became my favorite recipe for waffles, not only because of its deliciousness but because of the simplicity of this, a single bowl and 5 minutes are enough to have the mixture ready. And once the waffle maker is hot, it’s just a matter of waiting for the waffles to come out, to put a rich sauce on them and … ENJOY!

Easy peanut butter waffles
Just 6 ingredients and one bowl are enough to make these heavenly waffles!
Ingredients
- 2 eggs or 3 egg replacement*
- 1/2 cup coconut or muscovado sugar 100g
- 1/3 cup unsalted natural peanut butter 110g
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- 1 cup buckwheat flour 120g
- 1 tsp baking powder
Instructions

In a large bowl put the eggs with sugar, vanilla and salt. Beat until well integrated and add the peanut butter; keep beating.

Once the wet ones are well integrated add the flour and the baking powder, beat again, and let stand 5 minutes.

Heat the waffle maker and follow the instructions to make the waffles. I heat it to 80% of the maximum temp, I put a little butter or oil to prevent the mixture from sticking, and I put 3 or 4 tablespoons of mixture per waffle. It takes me about 4 minutes each.
Recipe Notes
*You can use an Orgran type egg replacement, or prepare one with 1 teaspoon of flax flour and 3 tablespoons of water for each egg, mix and let stand 15 minutes.
