If you follow me for some time you will know that I am a huge fan of peanut butter. And also fan of cookies, so this is one of my favorite recipes, only 6 ingredients, soft, quick and easy to make, plus they are gluten-free, and have a vegan option too, and you will have them ready in less than 15 minutes.

The main ingredients are coconut flour and peanut butter, did you ever baked with coconut flour? It is a flour a little difficult to use since its so crumbly, but if it is used in adequate amounts and in the correct way it contributes large amounts of nutrients and a very rich texture. In addition to being gluten-free and unrefined.

After making the cookies and let them cool, you can bathe them in chocolate, and if you never tried this combination let me tell you that you are missing something very delicious that is worth trying.
These cookies are rich in good fats, protein, and fiber. They are free of processed products, flours or refined sugars, and most importantly, they are delicious and ideal for any time of the day, whether snack, breakfast or tea time.

Peanut butter cookies
This recipe only has 6 ingredients and is gluten-free, is very easy to make and is ready in less than 15 minutes.
Ingredients
- 1 1/2 cups unsalted peanut butter 270g
- 2 eggs or 2 egg replacement*
- 1 cup muscovado or coconut sugar 210g
- 1/2 cup coconut flour 80g
- 1/4 cup milk of your choice 55ml
- 2 tsp vanilla extract
- 1/2 tsp sea salt
- 100 g dark chocolate optional
Instructions

Preheat the oven to 200°C and flour a baking sheet with parchment paper.

In a large bowl put the peanut butter, eggs and sugar, mix everything with a fork, and add the rest of the ingredients and mix again.

Make 20 balls of dough the size of a tablespoon, and with the help of a fork crush against the baking sheet. Bake for 10-12 minutes or until golden brown on top.

Let cool

For the chocolate bath melt the chocolate in the microwave or in a water bath and let it rest until it is at room temperature. Then once the cookies are cold, bathe each one in chocolate, and let cool.
Recipe Notes
*You can use an Orgran type egg replacement, or prepare one with 1 teaspoon of flax flour and 3 tablespoons of water for each egg, mix and let stand 15 minutes.
