I am one of those people who have breakfast at 8 o’clock in the morning and at 9 o’clock is already hungry, and at 11 o’clock again, and so on all day long. And the only thing that saves me from putting me hangry (yes, hunger makes me moody haha) and dying of hunger are snacks, cookies, bars, or bite-sized treats like these, are really saviors and I always try to have some by hand.

These bites are made of peanut butter, with a dark chocolate ganache on top, are vegan, gluten-free, very easy to make, and very rich, plus they fill you with energy. They do not have any kind of refined products, no flours, no eggs, and no dairy products. And it is not necessary to bake them, but they take consistency when the coconut oil and peanut butter are cooled.
The other ingredients are coconut flour, which provides rich texture, and keeps them dense and soft. They are sweetened with maple syrup (although you can also use honey) and they also have applesauce which keeps them moist, since coconut flour absorbs a lot of liquid.
They are ideal as a mid-morning snack or before training, or simply as a small dessert (small as long as you do not eat 15 of these haha)
