No bake coconut & chocolate bars

Chocolate and coconut, without a doubt, is one of my addictions lately. The taste of dark chocolate and the sweetness of coconut is simply amazing. With a raw base with only 3 ingredients and naturally sweetened. This is one of the most delicious and simple recipes I made. The perfect dessert for the whole family, to take away or eat with a coffee!

No bake coconut chocolate bars

Without oven, simple, quickly and very delicious!

Ingredients

Base

  • 1 cup raw cashew nuts
  • 1 cup dried figs
  • 3 Tbsp coconut oil melted

Coconut layer

  • 3 cups coconut flakes/shredded coconut
  • 1/2 cup maple syrup or honey
  • 1/2 cup coconut cream*
  • 1/2 cup coconut oil melted

Chocolate

  • 100 g dark chocolate 80% cacao minimum
  • 1/4 cup maple syrup or honey

Instructions

Base

  1. Put the cashew together with the figs and process until you don't have large pieces of cashew. Add the oil and re-process. Put in a mold of 20x20 cm with parchment paper. Cool for 1 hour.

Coconut

  1. Put all the ingredients until you get a homogeneous and wet mixture, you must be able to form a ball without it breaking, if it breaks add a little more oil or coconut cream. Put the mixture on the base and press well again. Cool one hour

Chocolate

  1. Melt the chocolate and heat the syrup or honey, mix well, without beating, and pour the chocolate over the coconut. Let cool one hour. Keep refrigerated.

Recipe Notes

*You can use coconut milk refrigerated overnight

    Figs are too dry. I am not able to grind then neither in mixi nor blender. Please let me know how to process fig & cashew together.,

      If your figs are too dry you have to soak them at least one hour in hot water or 4 hours in cold water, in this way they will soften. Let me know if you try the recipe!
