Healthy lava cakes
This recipe is very simple to make and very rich! Undoubtedly an elegant dessert perfect for any meal.
Ingredients
- 120 g dark chocolate at least 80% cacao
- 3 Tbsp coconut oil
- 1/3 cup muscovado or coconut sugar 70g
- 2 large eggs
- 1 tsp vanilla extract
- 3 Tbsp brown rice flour
Instructions

Preheat the oven to 200°C

Melt the chocolate together with the coconut oil in a water bath or in the microwave. Add the sugar and mix.

In another bowl beat the eggs with the vanilla for a couple of seconds, pour the chocolate over the beaten eggs, and mix. Add the flour and mix again.

Put the mixture in 2 round molds with parchment paper and bake for 8-10 minutes or until it is firm on the top and edges. Serve at the moment, very hot, with ice cream and more chocolate sauce.
Hi! Do you think I couls substitute the brown rice flour with a different kind? I haven’t seen it sold where I live.
Yes! You can use anything gluten-free flour for this recipe, or regular white flour if you don´t need a recipe suitable for coeliacs
Tried this- and I LOVE it. I actually didn’t have the two bigger baking cups so I just put the batter in a muffin pan (divided it 6 ways), and it turned out sooo good!! Can’t believe that something so simple and so much better for you is so good!!
