This recipe is very simple, it only takes 4 ingredients, and the result is amazing. Extra creamy, with those classic bubbles of a good homemade flan and a rich caramel made from muscovado sugar. And finally, a bit of sugar free dulce de leche on top or coconut cream, which gives a great touch and combines perfectly with the softness of the flan.

Healthy flan
This flan is a very easy dessert, only 4 ingredients and it is the perfect dessert for any time of the day.
Ingredients
- 4 cups skim milk 1 liter
- 6 eggs
- 2/3 cups coconut or muscovado sugar 140g
- 2 tsp vanilla extract
Caramel
- 1/3 cup coconut or muscovado sugar 70g
- 2 Tbsp water
Instructions
Caramel

In a hot pan put the sugar of the caramel and the water and leave to low fire, without stirring, until the sugar begins to melt. Stir gently until the caramel is ready and put in the molds, muffin molds or round molds (6cm in diameter). Let cool to temp. ambient.
Flan

Boil the milk with the sugar, stir every few seconds, and let cool. In another bowl beat the eggs together with the vanilla and pour over the milk.

Put the mixture on the caramel and cook in a water bath* until firm, for approximately 35-40 minutes.

Let cool in the refrigerator and enjoy with dulce de leche or cream.
Recipe Notes
* Baking in a water bath means that the mold of the flan is inside another mold, or a baking pan, with water. With only 1 or 2 fingers of water it’s enough.
Hi Sir Gaspar! Can I use powdered skim milk w/ added water for the skim milk? However, the powdered skim milk I have has other ingredients like palm oil, sucrose, soy lecithin (emulsifier), & vitamin A. The carbohydrate content is 12.6g per 32g serving, & 2.2g of that is sugar. Let me know your thoughts. Thanks.
Hi Jackie! Yes, definitely you can use powered skim milk to replace the skim milk. For next time I would try to get one without palm oil or sucrose, but it will work fine anyway. Let me know if you try it
