After a long time looking and searching on the internet I found an incredible amount of recipes without flour, and they really caught my attention, so I decided to make one with some of my favorite ingredients.
And when I say no flour
Buckwheat grain has a nice flavor, softer than buckwheat flour. And when you process it you get an incredible texture, a dough that when mixed with the rest of the traditional ingredients of the muffins becomes in a super recipe.
This in addition to the buckwheat has cacao, eggs or egg replacements (go to the notes of the recipe to see what I use) bananas, that help to maintain the muffins
Do you dare to try the recipe? You will not regret! If the tests tell me, send me an email or comment in the blog post how it came out, if you liked it, or that you would change it, I would love to listen to the advice of those who try my recipes! Do not forget to share the recipe in your networks and with your loved ones, they will appreciate it as much as I do!
Fluffy flourless chocolate muffins
These muffins are nourishing, easy to make and very delicious.
- 1 1/2 cup buckwheat groats, soaked overnight 300g
- 3 ripe bananas
- 1 egg or 2 egg replacement*
- 1/3 cup liquid oil, coconut or sunflower oil 70ml
- 1/2 cup coconut or muscovado sugar 90g
- 1/2 cup cacao powder 45g
- 1 1/2 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp sea salt
- 1/2 cup dark chocolate chips 90g
Preheat the oven to 180°C
Drain well and process the buckwheat groats until you get a homogeneous cream. Add the rest of the ingredients except the chocolate chips, and process again until everything is well integrated and without lumps.
Divide the mixture into 12 nonstick muffin tins. Add the chocolate chips on top, and bake for 12-15 minutes or until they are firm and start to crack on the top. When inserting a stick this should come out barely wet, we do not want dry muffins.
Let cool and enjoy
*You can use an Orgran type egg replacement, or prepare one with 1 teaspoon of flax flour and 3 tablespoons of water for each egg, mix and let stand 15 minutes.
