Ingredients
Cookies ingredients:
- 1 1/2 cup raisins (soaked overnight and drained)
- 1 cup coconut flour
- 1/3 cup melted coconut oil
- 1/3 cup cacao powder
- 1/2 cup chocolate chips (optional)
Filling | Relleno:
- 3/4 cup chopped dried figs soaked overnight and drained
- 2 Tbsp white tahini
- 3 Tbsp melted coconut oil

For the cookies, put the raisins in the food processor until is a smooth and creamy paste. Add the rest of the ingredients except the choc chips and process until everything is integrated. Put the dough in a bowl and add the chocolate chips. Make a ball with the mixture and stretch it on film until a thickness of 0.5 cm is obtained. Cut disks of 10 cm diameter and cool for one hour.

For the filling, put all the ingredients in the food processor until you get a thick cream that maintains the form, if not refrigerate until you get an appropriate consistency to fill the cookies. Assemble the sandwiches by putting 2 tablespoons of filling in each one, cool for one hour before eating.
