Easy peasy granola (only 20 minutes)

Do you know why my mom stopped making this granola at home? Because the whole batch used to disappear in a day, there was never enough for the next breakfast!

Granola is an essential food for those who want to have a healthy diet, and who do not want to spend too much time preparing breakfast or snack, or who need to have it ready from the day before (or even several days before). But we are not talking about the granola bought in the supermarket, that colorful box of granola isn’t good at all, they are full of refined sugars and processed fats (such as hydrogenated oils for example) which are really harmful to our health.

Only 20 minutes required to make it!

Homemade granola then, and the most frequently asked questions about this are:

Is it difficult to make? The answer is no, it’s crazily easy-to-make and very quick!

I have to make it every day? Well, if you are like me, you have to make it every day yes LOL, but if you are a normal person, with a pan of granola it will last you for a whole week or up to 10 days (it depends how many are those who eat)

And finally, my favorite question, what should add to it? You can put everything you want! My ideal granola has oats, rolled or instant oats, the one you prefer, seeds that add lots of nutrients (you can use any type of seeds, and nuts, almonds, cashews, walnuts, basically any dried fruit or nut, and my favorite ones, raisins, I know that not everyone love them so you can skip them.

It goes well with yogurt, sugar free jam and fresh fruit!

And the sweetener that combines everything and gives it that texture a little sweet and sticky is honey, mixed with coconut oil and a little vanilla, you have to taste it, is so delicious!

So you have no excuse not to make this delicious and easy granola to have for the next few days with your yogurt, your fruit, or alone as snack.

Easy and quick granola

In this recipe I use my favorite ingredients, and the approximate amounts to make a delicious granola, but you can use the ingredients you have on hand or the ones you like the most!

Prep Time 5 minutes
Cook Time 15 minutes

Ingredients

  • 2 cups instant or rolled oats 200g
  • 2 cups raw chopped almonds (or any other nut or a mix of them) 340g
  • 1/2 cup mix of seedes (I use chia, sunflower and flax seeds) 60g
  • 1 cup raisins (or any other dreid fruit) 160g
  • 1/3 cup honey or maple syrup for the vegan version 100g
  • 1/3 cup melted coconut oil 80ml
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 180°C. And in a roasting pan, distribute the oats, nuts and seeds (not dried fruit) and take it to the oven for 10-15 minutes (check every 5 minutes and mix them a little taking care not to burn them)

  2. Remove from the oven, add the raisins and mix.

  3. In a pot mix the honey with the oil and the vanilla, cook over low heat until mixed (about 3 minutes) without boiling.

  4. Pour the honey and oil mixture over the entire pan and with a spatula or large spoon mix well making sure that all the granola is soaked in this.

  5. Let cool and transfer to an airtight container (tupper or jar)

  6. Enjoy at breakfast or snack, with fruit, yogurt and sugar-free jam is my favorite way!
