Cinnamon rolls, who doesn’t love them? I know, in the title it doesn’t say cinnamon rolls, but I was inspired by these to make this recipe. I love cinnamon rolls, but do you know what I hate about making them? Having to wait about 2 hours for them to raise, then cut them, roll them and wait again, that’s fine, they become super fluffy, but it is sooo long, so I created these rolls that take less than 50 minutes from when you start until you put the icing and you eat them!

Another thing that does not convince me of the cinnamon rolls is that the filling practically melts with the dough, so you end with rolled bread with butter and cinnamon (excuse me cinnamon roll lovers) so I put the head to work and I looked for a filling that was easy to make, thicker, and that you can add a lot of it without it going bad, and that’s where dates come in (more specifically date paste) and pecan nuts, which by the way, combine very well! And so we have a filling of only 4 ingredients more than rich and more than easy to make.

Let’s go to the dough, this is made of wholewheat flour and white flour (75% whole wheat flour, white flour helps them to raise a little more in the oven) and as I said, they are YEAST FREE! The one that makes them grow is the baking powder, so you do not have to wait for them to raise, just mix, knead, stretch, fill, roll and bake! And they are insanely fluffy and have nothing to envy that whit yeast.

And last but not least and highly recommended, the glaze, which is made of light cream cheese, honey, natural yogurt and vanilla, sounds rich, right? But please don’t eat it by spoonfuls, it’s for the rolls!

This recipe does not fail, I tried it 3 times in a week and they were a real success at home.
If you want to give a twist to cinnamon rolls, or raise your weekend snack or breakfast, you can not miss trying it! In addition, they are very easy to make, certainly worth trying.

Date pecan rolls without yeast
Healthy whole wheat rolls filled with pecan and date paste ready in 50 minutes.
Ingredients
Dough
- 1 1/2 cups whole wheat flour 180g
- 1/2 cup ap white flour 60g
- 1 tsp baking powder
- 3 Tbsp coconut or muscovado sugar
- 1/4 tsp sea salt
- 1 Large egg
- 1/2 cup milk of your choice
Filling
- 2 cups pitted dates 400g
- 1 Tbsp unsalted peanut butter
- 3 Tbsp coconut oil
- 1/2 cup pecan nuts, chopped 80g
Glaze
- 1/4 cup light cream cheese 60g
- 1/4 cup greek yogurt, unswetened 50g
- 2 Tbsps honey
- 1 tsp vainilla extract
Instructions
Filling

Soak the dates in hot water for 30 minutes. Drain and put in the food processor. Process until obtaining a creamy and homogeneous paste, if necessary add a tablespoon of water, add the peanut butter and the melted coconut oil. Process, add the nuts, mix and set aside
Dough

Preheat the oven to 180°C (350°F)

In a large bowl mix the flours with the baking powder, add the salt and sugar and mix. Form a hole in the middle, add the egg and integrate, add the milk little by little and mix until you obtain a soft, moldable, non-sticky dough, if necessary add 1 more tablespoon of milk or a little more whole wheat flour .

Roll out the dough on a floured surface to a thickness of 1/2 cm, in the shape of a rectangle of approx. 40x20cm. Cut the dough widthwise, 10-12 strips of dough 4 cm wide by 20 cm, spread the filling on the strips and roll each one.

Put the rolls in a well-buttered roasting pan, paint them with beaten egg or milk, and bake until firm and golden brown (about 30-35 minutes)

Mix all the ingredients and spread over the rolls, enjoy !!!
