Coconut chocolate filled cookie sandwiches

When I think of my childhood it comes to my mind to go to my father’s restaurant, to the pastry and desserts part, or to the kitchen, and to devour dozens of coconut cookies with chocolate chunks, it is the most pleasant memory I have of that time haha, can not blame me, what child (or adult) can resist this combination?

Crunchy cookies filled with ganache, this is my way of reversioning those cookies that I liked so much when I was a little. Although these are much healthier than those of the restaurant but are not left behind in terms of flavor and texture, these are extra tasty, with an intense coconut flavor and a dark chocolate ganache that combines perfectly.

The cookies are made with oat flour, which is homemade, you only need instant or rolled oats, and a blender or food processor, and it will only take you 2 minutes to process the oats to obtain the flour, and it is much cheaper than buying it in a market.

A cup of shredded coconut, a bit of cornstarch to make the cookies lighter and a few ingredients more than you already have in your kitchen complete the recipe for the cookie dough, which after 5 minutes in the refrigerator and cut them are ready to bake. They are baked just in a few minutes, and the aroma that they give off is very tempting, enough to burn your mouth with them when they barely come out of the oven, yes, it happened to me with the first 5 cookies that I ate haha.

After we let the cookies cool it’s time for the ganache, super simple, only 2 ingredients, good quality dark chocolate and a few spoonfuls of milk of your choice, can be vegetable milk. Melt the choc, mix it with the milk and with the help of a pastry sleeve fill the cookies, cookie, chocolate, cookie and to the refrigerator for a few minutes to take consistency.

These recipes can be vegan by replacing the eggs with a vegan replacement (see the notes to see which ones I use) and using vegetable milk.

For a gluten-free version, use gluten-free oatmeal. Surely you get it at a store specializing in celiac products.

Coconut chocolate filled cookie sandwiches

These cookies take just a few ingredients and are quick to make, they will only take 20 minutes.

Ingredients

Cookies

  • 3 cups oat flour 300g
  • 1 cup shredded coconut 200g
  • 1/2 cup cornstarch 125g
  • 1/2 cup coconut or muscovado sugar 100g
  • 3 tsp baking powder
  • 1/4 tsp sea salt
  • 2 eggs*
  • 1/2 cup liquid oil (coconut or sunflower) 90ml
  • 1 tsp vanilla extract

Ganache

  • 200 g good quality dark chocolate at least 70% cacao
  • 4 Tbsp milk of your choice

Instructions

Cookies

  1. Mix the dry ingredients in a large bowl, add the eggs, vanilla and oil and mix with a fork, it should be a mouldable but not sticky dough, if it is too dry add a few tablespoons of water, if it is too sticky add a little more cornstarch. Leave in the refrigerator for 5 minutes.

  2. Preheat the oven to 220°C

  3. On a floured surface knead the dough with the help of a kneading stick to a thickness of half a centimeter. Cut circles of about 5cm in diameter and bake on a baking sheet with parchment paper for 10-12 minutes or until they begin to brown. Let cool

Ganache

  1. Finely chop the chocolate and melt it in the microwave for 30 to 60 seconds, mix with a spatula or spoon, add the milk and mix again. Put in a pastry bag and put about a tablespoon of mixture on half of the cookies, put another cookie on top and press a little. Cool 5 to 10 minutes before eating.

Recipe Notes

*You can use an Orgran type egg replacement, or prepare one with 1 teaspoon of flax flour and 3 tablespoons of water for each egg, mix and let stand 15 minutes.
