Chocolate chunk wholewheat scones

My family has English ancestry, and if there is one thing the English know how to do is cook, especially sweet food for the tea. In my house I have always been surrounded by sweets since I was little, and certainly at 5 o’clock in the afternoon it was my favorite moment of the day, why? Because it´s sweet food time aka tea time.

Among the pancakes, brownies, lemon cookies, and cakes, there were also some fluffy and slightly yellow biscuits, with a glaze or simply ready to be cut in the middle and put jam or butter. They were not the most tempting thing, but without doubt, these biscuits, or properly scones, which my grandmother used to make, were fantastic.

Since I started my healthy diet I stopped eating scones, although very occasionally I eat something with white flour or butter, I decided to create my own healthy scones recipe to be able to replace the classics ones at the time of the tea. And I believe that with this simple and delicious recipe I got it.

To make these scones you will need ingredients that you surely already have in your home or that you can easily get. These are oat flour, which you can buy or make yourself, processing oat flakes with a food processor or blender. Instant oat which gives an extra touch of texture to the recipe, wholewheat flour, which provides many nutrients and fiber that the classic scones do not have, and basic ingredients of each recipe such as eggs, oil (to replace the butter to achieve that classic texture of the scones), sugar (muscovado or coconut sugar) vanilla and last but not least, dark chocolate chopped to fill these scones with an incredible flavor.

It is an easy recipe to make, once you have all the ingredients just have to mix, put in a cake mold, divide the mixture into 6 or 8 portions, and bake until golden brown and cooked to the center, but not dry, since they are moist, soft, and with a lot of flavor.

Chocolate chunk wholewheat oat scones

Less than 10 ingredients to make these healthy scones with chocolate chips. Full of nutrients, and nothing to envy to the classic scones of white flour and butter.

Cook Time 25 minutes
Servings 8 scones

Ingredients

  • 2 cups oat flour 200g
  • 1/2 cup instant oats 50g
  • 1 1/2 cups whole wheat flour 120g
  • 2 eggs or 3 egg replacement*
  • 1/2 cup liquid oil (coconut or sunflower oil) 100ml
  • 1/2 cup mil of your choice 100ml
  • 2/3 cup coconut or muscovado sugar 140g
  • 2 tsp vanilla extract
  • 100g dark chocolate chopped at least 80% cacao

Instructions

  1. Preheat the oven to 180°C

  2. In a large bowl put the dry ingredients and mix, including the sugar, once integrated add eggs, oil and vanilla and mix. Add little by little the milk while you are mixing. Once all integrated add chocolate and mix.

  3. Put the mixture in the form of a bun in a round cake pan with parchment paper, cut the dough into 8 portions with a knife, and bake for 20-25 minutes or until they are golden, cooked and firm but not dry inside.

  4. Let cool and decorate with a yogurt glaze and orange zest

Recipe Notes

*You can use an Orgran type egg replacement, or prepare one with 1 teaspoon of flax flour and 3 tablespoons of water for each egg, mix and let stand 15 minutes.

BROWNIES DE COCO SIN GLUTEN Y SALUDABLES 🥥🍫 ya les resolvi la merienda del finde, de nada 😉

Brownies
-200gr de @chocolateaguila 70% cacao
-1/2 taza de aceite neutro, manteca o ghee (100g)
-4 huevos
-1/2 taza azúcar mascabo (75g)
-1 cdta extracto de vainilla 
-1/2 cdta sal
-1/2 taza harina de trigo sarraceno (60g)
Derretir el chocolate y el aceite a baño maria. Por otro lado batir los huevos con el azúcar hasta que esta se haya disuelto. Agregar el chocolate y mezclar. Agregar la harina e integrar bien sin que queden grumos. Pasar a un molde de 20x20cm y hornear 15-17 minutos a 180°C.
Coco
-3 tazas coco rallado (250g)
-4 Cdas aceite de coco, manteca o ghee
-4 Cdas miel
Mezclar todo o procesarlo y poner sobre el brownie, apretar bien contra abajo con ayuda de una cuchara o un vaso.
-100g chocolate amargo y 2 Cdas manteca, ghee o aceite de coco.
Derretirlo a baño maria o en el microondas, verter sobre el coco y enfriar hasta que este firme. Disfrutar!

-2 tazas harina de avena (200g)
-1 taza harina de almendras (130g)
-1/2 taza azúcar mascabo (80g)
-1/2 cdta sal
-1 cdta polvo de hornear 
-1 cdta escencia de vainilla
-1 huevo
-1/2 taza aceite de coco o girasol (120ml)
-100g chispas chocolate amargo
En un bowl grande mezclar los ingredientes secos. Agregar los húmedos e integrar bien. Agregar las chispas, mezclar, y formar 12 - 15 bolitas de masa. Poner en una asadera con papel manteca, aplastarlas, y hornear 14 minutos en horno precalentado a 180°C. Dejar enfriar y disfrutar!

Tarta frangipane de moras (saludable)
Masa
-1 1/5 tazas fécula de mandioca (200g)
-1 taza harina de almendras (120g)
-1 huevo y 1 yema
-2 Cdas aceite de coco
-1/4 cdta sal
-1/4 taza azúcar mascabo (40g)
Relleno
-2 huevos
-1/2 taza miel (150g)
-1/2 taza aceite de coco (120ml)
-1 taza harina de almendras (120g)
-1 cda extracto de vainilla 
-1/2 cdta sal
-2 Cdas maicena
-puñado de moras
Para la masa poner los ingredientes secos en un bowl. Agregar los húmedos e integrar bien. Enfriar 30 minutos. Precalentar el horno a 180°C. Estirar la masa sobre una superficie enharinada hasta un grosor de 3mm. Poner en un molde de tarta de 20cm de diámetro. Para el relleno batir todos los ingredientes cuidando de que no queden grumos. Poner sobre la base, decorar con las moras, y hornear 30-35 minutos o hasta que este firme. Dejar enfriar y disfrutar!

2 mojitos
-2 oz ron blanco @havanaclub (60ml)
-1 oz jugo de lima (30ml)
-1 oz sirope/almíbar neutro (30ml)
-2 limas troceadas
-10 hojas de menta
-8-10 moras
-completamos con hielo y agua con gas o soda
Ponemos la menta, moras y lima en una jarra y con un morterito o cuchara presionamos bien contra el fondo para que suelten el sabor. Agregamos los líquidos, mezclamos bien y servimos con hielo. Disfrutar!

Barritas crumble de frutillas y mantequilla de maní 😋

Base
-1 1/2 tazas harina de avena (150g)
-1 taza fécula de mandioca o maicena (130g)
-3 Cdas azúcar mascabo 
-2 huevos
-1 taza mantequilla de maní (250g)
-4-5 Cdas de agua
-Pizca sal marina
Relleno
-3 tazas (600g) frutillas picadas
-2 tazas mermelada de frutillas sin azucar (500g) @losnietitos
-3 Cdas maicena diluidas en agua
Molde de 22x22cm
Precalentar el horno a 200°C. Enmantecar y enharinar el molde o usar papel manteca. En un bowl grande mezclar los ingredientes secos de la base. Agregar los húmedos e integrar. Debe ser una masa suave pero no pegajosa. Dividirla en 2. Poner la mitad de la masa en la base, apretar bien y cocinar 10 min. En una ollita cocinar las frutillas con la mermelada hasta ablandar las frutillas. Agregar la maicena diluida y mezclar hasta que empiece a espesar. Poner sobre la base. Agregar el resto de la masa en forma de crumble y hornear 25 a 30 minutos hasta que el crumble este dorado. Dejar enfriar y disfrutar con heladooo 🤪
