Blueberry panna cotta

The panna cotta is a super simple dessert, literally means cooked cream, is a dessert originally from Italy. The panna cotta basically carries cream, sugar and jelly, and there are many flavors and versions. This version is a super healthy and vegan version, besides that it has a beautiful color.

I have used only 4 ingredients, agar agar, coconut milk, blueberry powder and brown sugar. I´ll also give you the recipe of the world’s most delicious blueberry coulis and a super creamy matcha cream.

Blueberry panna cotta

Super fast, and a really delicious replacement to the classic panna cotta, it's a light and super creamy dessert perfect for a sweet craving.

Ingredients

  • 1 cup coconut milk (full fat is better)
  • 1 tsp agar agar powder
  • 2 Tbsp muscovado or coconut sugar
  • 2 Tbsp blueberry powder

Blueberry coulis:

  • 1/2 cup blueberries (fresh or frozen)
  • 1/4 tsp vanilla extract
  • Juice of half orange
  • 2 Tbsp coconut or muscovado sugar

Matcha cream:

  • 2 Tbsp coconut cream or full-fat coconut milk chilled overnight
  • 1 tsp maple syrup
  • 1 tsp green matcha

Instructions

Panna cotta:

  1. Put all the ingredients in the blender and blend well. Put the mixture in a saucepan over medium heat until it boils, mixing all the time. Reduce the heat to the minimum and continue mixing for two minutes. Put in muffin molds. Put in the refrigerator and refrigerate about 2 hours.

Berry coulis:

  1. Put the ingredients in a saucepan over medium heat and mix every few seconds until the blueberries are very soft. Crush the blueberries or process them for a few seconds. Return to the pot and cook until it turns into a thick sauce. Let cool

Matcha cream:

  1. Mix and cool
