Best (No)meatballs ever

Easy peasy lemon squeezy, the best vegan meatballs coming your way, and hitting so hard the veggie game! Made in less than 10 minutes and with very few ingredients. And also, they have nothing to envy to the classic meatballs made of ground meat!

Veggie burgers, bean meatballs, the soy patties, are getting better and better, and now you can get them in the supermarket more easily than before, but generally, they are full of binders, chemicals and a lot of other crap that make them unhealthy despite being veggies. And what about making them homemade? Well, they are really easy to make, super simple, very fast, yielding, they can be frozen and if you have the right recipe, they can be even more delicious than meat ones!

Who´s coming for dinner?

At home, we eat more and more veggie burgers for example, especially because my sister doesn’t eat meat, and my mom prefers to avoid it when she can. I really like them, especially because we are always changing the recipe and trying new products to vary the flavor, color, and nutritional value. This is important, to vary and combine legumes with cereals in the correct way to complete all the amino acids that create the proteins we need.

They are so good with pasta

In this case, for these meatballs, we combined black beans, which are my favorites for everything related with veggie burgers or meatballs, and brown rice, which gives it a good texture and a rich flavor. It is important to season them correctly, this can be done to taste, but the essentials are sautéed vegetables, such as onion, garlic and bell pepper, salt (obviously), pepper, and some herbs such as cilantro or parsley (or both haha).

Look at that texture!

These meatballs go very well with pasta, mashed potatoes and tomato sauce. They are a real bomb. The texture is great, and you just have to heat them because the ingredients are going to be already all cooked.

Vegan meatballs made of brown rice and black beans

Vegan meatballs, high in protein and nutrients with a great texture, suitable for cooking in sauce, and perfect to eat with pasta or mashed potatoes.

Cook Time 20 minutes
Servings 16 medium size meatballs

Ingredients

Meatballs

  • 1 cup cooked and drained black beans 220g
  • 2 cups cooked brown rice (about 1 cup raw) 400g
  • 1/2 medium onion
  • 1/2 small red pepper
  • salt and black pepper to taste
  • Herbs to taste (cilantro, parsley, oregano)

Sauce

  • 3 cups tomato sauce
  • 1/2 medium onion
  • 2 cloves of garlic
  • seasonings to taste (oregano, salt, black pepper)

Instructions

Meatballs

  1. Finely chop the bell pepper and onion, and sauté in a pan with a little oil until they soften. Process the beans together with the brown rice until obtaining a smooth and homogeneous paste. Add seasonings and sauteed vegetables and process again.

  2. Let the mixture cool for 1 hour. Once this time has passed, form 16 balls of dough of 3cm in diameter.

  3. If you are going to eat them with sauce (I leave you a basic recipe but that does not fail) you heat the sauce, and put the meatballs inside, cooking them over low heat until they are hot. And while making the pasta or potato puree according to the directions on the package.

Sauce

  1. Finely chop the vegetables and sauté them in a pot with a little oil, stirring every few minutes. Once soft and slightly browned, add the tomato puree and seasonings and cook until hot. Add the meatballs and cook for 5 to 6 minutes.

  2. Remove from heat and serve with spaghetti, mashed potatoes or whatever you like the most!
