Who in this world doesn’t love an oatmeal cookie with chocolate chips? I love them, I’m addicted, if you have this kind of cookies it’s better if you do not tell me, because I’m going to make them disappear.

And how to take one of the simplest and richest things in the world to the next level? Adding more chocolate, turning them into fluffy bars, and simplifying the recipe to the maximum, creating one of my new favorite recipes, these cookie bars filled with chocolate and with only 8 ingredients.

And the recipe is very simple to follow, first, we beat the wet ingredients, add the dry ones, all the chocolate you can eat, and bake just 10 minutes and Voila, you have some bars that are ideal for the snack or breakfast the next day … or for any time of the day!

Baked cookie dough bars

Super simple to make, they only take 20 minutes and 8 ingredients, and are more than rich and a little addictive!

Ingredients

  • 1/2 cup peanut butter, melted 110g
  • 1/2 cup coconut or muscovado sugar 120g
  • 3/4 cup milk of your choice 180ml
  • 1 egg or 2 egg replacement*
  • 2 tsp vanilla extract
  • 2 cups oat flour** 220g
  • 2/3 cup rolled oats 80g
  • 2/3 cup chopped dark chocolate 150g
  • 1 tsp baking powder
  • 1/4 tsp sea salt

Instructions

  1. Preheat the oven to 180°C

  2. Put the first 5 ingredients (the wet ones including the sugar) in a big bowl, beat until everything is well integrated.

  3. Add the dry ingredients little by little except the chocolate and mix. Once all mixed put the chocolate and mix again. It must be a sticky mixture but not too liquid.

  4. Put the mixture in a mold with parchment paper and floured, of about 20x30 cm and bake for 10-15 minutes or until golden brown on top.

Recipe Notes

*You can use an Orgran type egg replacement, or prepare one with 1 teaspoon of flax flour and 3 tablespoons of water for each egg, mix and let stand 15 minutes.

 

** Processed oats until get a fine flour
